Winter Goodness Bowl

Ingredients
- BOWLS:
- 1 small head cauliflower
- 1 small red cabbage, chopped
- 1 ½ cups garbanzo beans
- ¼ cup spinach
- 1 ½ tsp cumin
- 1 tsp hot chili powder
- Dash of salt
- 1 tbsp extra virgin olive oil
- ½ cup cooked roasted buckwheat
- 1 zucchini, slivered using vegetable peeler
- Handful of pomegranate arils
- DRESSING:
- 3 tbsp tahini paste
- 3 tbsp lemon juice
- 1 cup fresh parsley leaves, roughly chopped
- 1 clove garlic (minced)
- ½ tsp chili powder
- Salt to taste
- 3 tbsp water
Instructions
Break cauliflower into small florets. Heat your air fryer to 390° F and bake for approximately 30 minutes.
While the cauliflower is baking, finely chop red cabbage and place it in a mixing bowl. Add garbanzo beans, cumin, chili powder, salt, and olive oil to the bowl and mix until the spices are evenly distributed.
Add ¼ cup of spinach to a serving bowl. Top with the cabbage and garbanzo bean mixture. Add buckwheat to garnish. Peel 3-4 slices of zucchini and add to the serving bowl. Top with roasted cauliflower and add dressing. Finish with pomegranate arils as a garnish.
For the dressing, Combine all ingredients (except parsley) and mix until smooth. Add water to reach your desired thickness. Then add the tahini mixture and parsley to a food processor and pulse until the sauce is a lovely shade of green. If you don’t have a food processor, a mortar and pestle may also be used.
To serve: Portion out the roasted cauliflower, garbanzo beans, cabbage, buckwheat, spinach, and zucchini into bowls and top with tahini dressing.
