Pumpkin Whipped Feta

Ingredients
- 8 ounces feta cheese
- 1 cup unsweetened pumpkin puree
- 1/4 cup unflavored Greek yogurt
- 2 tbsp. honey
- 2 tsp. thyme
- Black pepper, to taste
- Fresh thyme for garnish
- Pepitas
Instructions
In a food processor (or blender set to “pulse”), combine the feta cheese and Greek yogurt and blend until the mixture has a rich, smooth consistency.
Stir in pumpkin puree, honey, thyme, and black pepper. Quickly pulse to blend until the mixture is smooth and deep, yellow-orange in color.
Cover and refrigerate for 30 minutes or until desired firmness.
Top with pepitas and a sprinkle of fresh thyme, and serve with fresh, toasted bread.
