Fig Honey Thyme Cocktail

Ingredients

  • 2 ounces Torresella Prosecco Rosé
  • 6 fresh figs, diced
  • 1 red plum, diced
  • 2 ounces elderflower liqueur
  • Juice from 1 lemon
  • 2 to 4 tablespoons honey
  • 1 tablespoon fresh thyme leaves, plus more for garnish

Instructions

Add the diced figs to a Boston shaker and using a muddler, crush the figs until they are in small pieces and there is plenty of juice. Add the diced plums, elderflower liqueur, lemon juice, honey, thyme, and ice; cap the shaker to seal it. Shake vigorously for about 10 seconds. Then, using a strainer, pour into coupe glasses. Top with Torresella Prosecco Rosé and garnish with a slice of fig or fresh thyme, if you like.
