Classic Potato Salad

Ingredients

  • ½ cup and 1 tablespoons kosher salt ​
  • 1 cup mayonnaise ​
  • ¼ cup sweet relish ​
  • 4 large eggs ​
  • 2 celery stalks​
  • 1 medium red bell pepper ​
  • ½ red onion ​
  • 2 tablespoons Dijon mustard ​
  • 3 tablespoons yellow mustard ​
  • 10 medium potatoes ​
  • Barbecue seasoning ​

Instructions

To make this classic potato salad, simmer ten medium potatoes in a large pot, add salt to the water, and cook until tender for 20 minutes. In a medium saucepan, boil four eggs. Once done, crack and peel them. Cut them in half, remove the yolks, and add them to a large bowl. Chop the egg whites and set aside. Mash the yolks until they have a smooth texture. Add the mayonnaise, sweet relish, yellow mustard, Dijon mustard and salt. Mix well. Fold in the chopped red bell pepper, red onion, and celery. Set aside and drain the potatoes, let cool for 5 minutes, peel them with a knife or peeler, and cut into pieces. Add to mixture and toss. Fold the egg whites and let chill for at least 1 hour. Enjoy a glass of Torresella Pinot Grigio. Buon appetito!
