Baked Turkey Parmesan

Ingredients
- 4 pounds boneless, skinless turkey breast, cut into large slices
- 1/2 cup all-purpose flour
- 3 large eggs, beaten
- 2 cups breadcrumbs
- 12 ounces marinara sauce
- 2 cups shredded mozzarella
- 1 cup freshly grated Parmigiano Reggiano
- 1 tbsp. kosher salt
- 1 tsp. dried oregano
- 2 cups canola oil
- 1/2 tbsp. butter (unsalted)
- fresh basil leaves
Instructions
Set up three shallow bowls: one with flour, one with beaten eggs, and one with breadcrumbs. Season the breadcrumbs with a pinch of salt and oregano.
Lightly salt each slice of turkey and dredge each piece in the flour, then dip in the egg, and finally coat with the seasoned breadcrumbs. Place the breaded turkey slices aside.
Add canola oil to a large skillet and heat oil to a medium-high temperature (about 365°F). Fry the turkey slices until they are golden and crispy, flipping once or twice. Place the fried turkey slices on a plate lined with a paper towel.
Coat the bottom of a shallow roasting pan with marinara sauce. Add turkey slices on top of the sauce. Add another thin layer of sauce on top of the turkey, followed by a layer of mozzarella cheese and then another layer of Parmigiano Reggiano cheese. Add fresh basil to the top.
Bake in the preheated 400°F oven for 40 minutes. The top should be golden brown and bubbly. Let rest for 10 minutes before slicing and serving.
