Cranberry & Pecan Rice Bowl

Ingredients
- 1 2/3 cups wild rice or wild rice blend
- 1/2 cup dried cranberries
- 1/2 cup dried apricots, roughly chopped
- 1/2 cup pecan halves, roughly chopped
- 1/2 cup roasted and salted pistachios
- 1/2 cup celery, diced
- 1/4 cup red onion, diced
- 1/4 cup green onions, sliced thin
Instructions
Rinse the rice with cold water and add it to a large stock pot of boiling water. Boil the rice for about 30 minutes until it starts to soften (it should be somewhat firm).
Strain the rice and rinse again with cold water to stop it from cooking any further. Add to a large mixing bowl and allow the rice to cool on the counter.
Add all of the ingredients to the rice and toss gently with a lemon vinaigrette or your favorite light dressing. Refrigerate and serve cold or in a shallow bowl at room temperature.
